Thyme Roasted Carrots w/ Garlic & Herbs Spread

A side dish or a starter for 3 people.

  • 6-8 multi-colored carrots
  • 150 g Garlic & Herbs cream cheese
  • Beet shoots
  • 1 dl of pistachios
  • 1 tbsp thyme
  • 1 tbsp coriander
  • 2 tbsp olive oil
  • Sprinkle of sea salt
  • Turn your oven to 190ºC/374ºF
  • Start by peeling your carrots. Add them to a baking sheet lined with parchment paper.
  • Add your spices, salt and olive oil and massage them until fully coated.
  • Bake the carrots in the oven for around 30 mins, but keep an eye on them so they don’t burn.
  • Grab a nice looking plate and spread an entire tub of Garlic & herb cream cheese evenly in the middle of the plate.
  • Place the carrots evenly on top of the spread out cream cheese.
  • Garnish with beet sprouts and chopped up & toasted pistachios.
