Thyme Roasted Carrots w/ Garlic & Herbs Spread
INGREDIENTS
HOW-TO
A side dish or a starter for 3 people.
6-8 multi-colored carrots
150 g Garlic & Herbs cream cheese
Beet shoots
1 dl of pistachios
1 tbsp thyme
1 tbsp coriander
2 tbsp olive oil
Sprinkle of sea salt
Turn your oven to 190ºC/374ºF
Start by peeling your carrots. Add them to a baking sheet lined with parchment paper.
Add your spices, salt and olive oil and massage them until fully coated.
Bake the carrots in the oven for around 30 mins, but keep an eye on them so they don’t burn.
Grab a nice looking plate and spread an entire tub of Garlic & herb cream cheese evenly in the middle of the plate.
Place the carrots evenly on top of the spread out cream cheese.
Garnish with beet sprouts and chopped up & toasted pistachios.
